Apple Fritters

Ingredients:

125 g flour
150 ml milk
1 ½ teaspoon baking powder
1 egg yolk
2 egg whites
5 apples
Juice of 1 lemon
50 g sugar
3 tbsp brandy

Directions

Sift the flour into a bowl.
Make a well and beat in the egg, yolk, baking powder,
In a bowl combine the sugar, lemon juice and brandy.
Peel and core the apple and cut into dice.
Toss the apples in the brandy mixture and leave to soak for 30 minutes.
Beat the egg whites until stiff.
Fold the apples and egg whites into the batter.
Preheat the fryer to 350 F.
Drop teaspoon full of apple batter into deep hot oil and fry for about 3 minutes until nicely browned.
Drain on paper and sprinkle with sugar.
